leJOS and JDK 8

I am working with newby teachers and students to get them going with Java on EV3. Now that Oracle has archived JDK 7, getting it installed is more complicated that I would like and I am wondering if the recommendation to use JDK 7 with leJOS still stands?

You mention using a compact profile is a way to use JDK 8 with leJOS. Is there any doc about what that entails? I would like to know more to see if that is a better option.

The problem is not the JDK it is creating a suitable JRE for the EV3. It is almost certainly not a better option. The steps to create a Java 8 JRE are rather complex. See...
